The current log file on the server is 650MB and crashed notepad when I tried to open it.

https://notepad-plus-plus.org/ can open big log files.
You should periodically rename the file with the current date so it doesn't get too big.

between 2011 and 2017 they were renamed keeping them to ~10MB, but I think someones been slacking since then.

With notepad++ or ultra edit, you can open the massive log file, search for a date, like January 1, for instance, highlight everything up to that line, cut and paste into a separate file. Wash, rinse, repeat, until you have a bunch of manageable files.
