Your brain tells you that objects in shade should be darker, so when it sees a contradiction to this, it assumes that they are actually 2 different shades of grey and over-compensates.

It's a gradient. Each surface starts darker near the top and gets lighter near the bottom. When you chop out the middle, where the surfaces meet is clearly a different shade of gray.
I'm not even convinced that the gradient is identical... Surely it contains some of the same shades of gray, but does it start and stop on precisely the same hue? Does it progress at the same rate?

YES! That one works the same way.
A good example of how your brain tries to do white-balance is this one.
Look at the X in the center
See the green dot?
It doesn't exist.
If you look long enough all the pink dots will disappear entirely, leaving only a circling green dot that's not really there.
Your brain tries to white-balance the pink dots by adding green, but the pink dots move so fast your brain can't keep up, leaving a phantom green dot behind.
Eventually your imaginary green dot cancels out all the pink dots in an attempt to make them white. The green dot then only appears where there is no pink to cancel it out.
